Twin Forks Oyster Co., founded in 2024, is on a mission to bring you the freshest Long Island oysters with a unique twist! Imagine an interactive mobile raw bar experience, delivered right from the bed of a vintage 1962 Ford Econoline Pickup, lovingly dubbed "Pearl."
Meet Laura and Bryan, the dynamic duo behind this oyster adventure, hailing from East Setauket, NY. With their five kids and two dogs in tow, shellfish has always been a family affair. Bryan’s love for bivalves started with fond memories of his first hard clam and coolers brimming with little necks and oysters. This passion was something he shared with Laura, and together, they’ve created new memories with their children, all while fostering a deep appreciation for local aquaculture and its positive environmental impact.
Fifteen years ago, a spirited conversation sparked the dream of owning an oyster business. With oysters being both eco-friendly and bursting with diverse flavors and toppings, it seemed like the perfect passion project.
This past spring, fate smiled upon them with the opportunity to purchase Pearl. Their dream became reality, and Twin Forks Oyster Co. hit the road, bringing their love for oysters to life. Join them on this delicious journey as they continue to expand their oyster dream, one shuck at a time!

At Twin Forks Oyster Co., we're all about making your event unforgettable with our fun, customer-centric approach. Whether it's a backyard bash, a wedding, or a corporate gathering, we've got you covered. We like to keep things casual and relaxed, so as long as the weather's good, we love to serve our oysters straight from the back of Pearl.
When the weather isn't cooperating, don't worry—we've got a stylish raw bar oyster table that we can decorate to match your theme. Just a heads-up, Pearl is a classic car with a lot of character. She's got some wear and tear from years of love, but we think her charm makes her the perfect conversation piece for any event.
All of the shucking is done fresh to order on-site, and so long as time allows, comes with some fun facts and history around our bivalve friends.
We’ve partnered with some of the finest oyster farms on Long Island to promote sustainability and support our local farmers. Depending on your package, we can provide a variety of oysters from across the island, each bringing their own unique notes and flavors from the waters they come from.

Please note: All sales are subject to NYS sales tax and an administrative fee, which covers labor, planning, prep, travel, ice, and other miscellaneous costs. Gratuity is not included. All packages come with condiments, including lemons, hot sauce, mignonette sauce, and horseradish.
If your party needs more oysters than included in any of our packages, just let us know—we're happy to accommodate!
We provide plates, utensils, napkins, ice, and garbage pails with bags. We can also handle trash removal upon request.

**Billing**
A 50% deposit is due upon booking via invoice. All remaining balances are due 72 hours before the event date. Due to the nature of our business, high demand, and the advanced ordering from our farmers, all payments are non-refundable once collected. We will make every effort to ensure Pearl is a part of your event, but in the case of an act of God (weather, unexpected truck malfunction, or any other unforeseeable event), we will be prepared to set up with tables and everything needed to provide the experience onsite.
